Crunchy Pavlova: The Freeze-Dried Berry Upgrade Your Christmas Table Needs
Every great Australian summer dessert has one quiet enemy: moisture. Pavlova has it worse than most — fresh berries weep juice into the cream, the meringue goes soggy, and by the time seconds come around it looks tired. Freeze-dried berries fix all of it: intense fruit flavour, zero moisture, and a crunch that plays off the marshmallow centre.
The recipe
For the meringue: 4 egg whites at room temperature, 1 cup (220g) caster sugar, 1 teaspoon white vinegar, 1 teaspoon cornflour, half a teaspoon of vanilla.
For the top: 300ml thickened cream, whipped; a 20g packet of freeze-dried strawberries; a small handful of freeze-dried blueberries and raspberries; fresh passionfruit if you like.
Method
- Preheat the oven to 150°C (130°C fan). Beat egg whites to soft peaks, then add sugar a spoonful at a time until thick and glossy.
- Fold through the vinegar, cornflour and vanilla. Pile onto a lined tray in a 20cm round.
- Bake for 1 hour 15 minutes, then turn the oven off and leave the pav inside to cool completely — patience here is the anti-crack secret.
- Just before serving: whipped cream on top, then crush half the freeze-dried strawberries over the cream like crimson snow and scatter the rest whole with the blueberries and raspberries.
Why it works
Freeze-dried berries carry no water, so the meringue stays crisp for hours — and their flavour is more concentrated than fresh, so every bite tastes louder. The crushed-berry dust also turns the cream a gorgeous pink as it slowly melts in. One warning: the decorating supply has a habit of being eaten straight from the packet, so buy two.
Top your pavlova with 100% Australian freeze-dried berries — nothing added but the crunch.
