Freeze-Drying 101: The Space-Age Technology That Preserves Australian Fruit & Vegetables
Freeze-drying sounds like something out of a laboratory, and in a way it is — the process was perfected for medical supplies in the 1940s and made famous by NASA, which used it to feed astronauts on the Apollo missions. Today the same technology preserves the strawberries, blueberries and pineapple in an Outback Bites packet. Here is what actually happens — and why the result tastes so different from ordinary dried fruit.
Step one: deep freeze
Fresh fruit is washed (at Outback Bites, in reverse osmosis–filtered water), prepared, and frozen solid at around minus 40 degrees Celsius. Freezing fast matters: it keeps ice crystals small, which protects the cell structure of the fruit so it holds its shape right through to the finished packet.
Step two: the vacuum
The frozen fruit goes into a vacuum chamber where the pressure drops far below normal atmosphere. Under vacuum, something remarkable happens: the ice does not melt into water, it turns directly into vapour. Scientists call this sublimation — the same reason snow slowly disappears on a cold, dry, sunny day without ever becoming slush.
The process as a whole has a formal name too: lyophilisation. If you ever see freeze-dried food described as lyophilised on a label or in a research paper, it means exactly this — frozen hard, then dried under vacuum, never heated.
Step three: the slow extraction
Over many hours, gentle warmth encourages the ice to sublimate away while the fruit itself never heats up or cooks. Around 99 per cent of the water leaves. What remains is the entire structure of the fruit — its shape, colour, flavour compounds and nutrients — with almost no moisture for microbes or enzymes to work with.
There are really two stages inside this step. Primary drying is the sublimation itself, and it does the bulk of the work. Secondary drying follows, using slightly more warmth to draw out the last of the water still bound to the food's own structure — that is what brings the final moisture content down to a couple of per cent, and it is the difference between food that keeps for months and food that keeps for years. A full cycle runs somewhere between one and two days per batch. Freeze-drying is slow by nature; that is the price of never applying enough heat to cook anything.
Why the result is so different from dried fruit
Conventional drying uses heat, which cooks the food, darkens the colour and leaves it chewy. Freeze-drying never cooks anything, so a freeze-dried strawberry is still visibly, recognisably a strawberry — just feather-light and crisp, with an intensity of flavour that surprises people the first time they try it. Is freeze-dried fruit still nutritious?
This is the question we get asked most, and it is the best part of the story. Because there is no cooking step, freeze-drying keeps most of the vitamins and antioxidants of the fresh fruit — noticeably more than heat-drying does for delicate, heat-sensitive nutrients like vitamin C. And with the water gone, what nutrition remains is concentrated by weight: a 20-gram packet of freeze-dried strawberries began life as roughly 200 grams of fresh ones. There is no added sugar, no preservatives and no sulphites — just fruit with the water taken out.
Which fruits and vegetables freeze-dry best?
High-moisture produce gives the most dramatic result, which is why berries and melon are such favourites. Our strawberries, blueberries, raspberries and watermelon turn feather-light and shatter-crisp, while pineapple and apple keep a satisfying snap. It is not only fruit, either — vegetables and pantry heroes freeze-dry beautifully too, from whole garlic cloves to a just-add-water guacamole.
That is the whole trick: no preservatives, no additives, no clever chemistry. Just water, carefully removed. It is also the reason sealed freeze-dried produce travels across Australia's interstate quarantine borders when fresh fruit and vegetables cannot — there is simply nothing left alive in the packet.
Can you freeze-dry fruit at home?
You can, and home machines have been sold in Australia for several years now — but it is worth knowing what is involved before you go looking. A domestic freeze dryer is a serious appliance: models sold here start at around $8,000 and run past $16,000 for the larger sizes. It needs a vacuum pump whose oil gets changed, a power point it can have to itself, and somewhere a fridge-sized machine can run continuously for a day or two per batch. Then there is the packaging — mylar bags, oxygen absorbers and a heat sealer — because freeze-dried food that is not sealed properly quietly pulls moisture back out of the air and loses its crunch.
If you grow your own and want to preserve a glut every summer, the machine earns its keep. For everyone else the sums usually favour buying it already done — which is, admittedly, exactly what we would say, but it is easy enough arithmetic to check for yourself.
